January Theme: cooking with Alcohol (amanda)


GUINNESS CUPCAKES




*Preheat over to 350
*Melt 1 stick of unsalted butter in a large saucepan over medium heat
*Remove from heat and add 1 C Guinness (it may bubble up a lot- don't worry!)
*Whisk in 3/4 C unsweetened cocoa powder and 2 C sugar- stir until sugar is dissolved
*Beat 3/4 C sour cream, 2 eggs and 1 T vanilla in a small bowl and slowly whisk in
*Whisk in 2 C flour and 2 1/2 t baking soda

Pour into a greased baking dish and bake for 45 minutes (25 minutes for cupcakes) or until toothpick comes out clean (you'll want to pour it in quickly after whisking in the flour or it won't come out quite right)

While baking soften 8 oz sour cream.
Beat sour cream, 1 1/4 C powdered sugar and 1/2 C sour cream together for frosting. Frost after cake has cooled.
